Fondant Icing

I used fondant icing to cover the cakes - roll out fondant icing.  Another fondant icing which could be used to cover cakes is cooked fondant icing.  However, this rolled out fondant icing is very easy to use.  In the old days, one has to make one's own fondant icing.  However, nowadays, it is so cheap to buy ready made fondant icing.  In fact it is more expensive to make one's own fondant icing.  

To make one's own fondant icing one would need:

2 lbs 4 ozs sifted icing sugar [around 1 kg]
4 tsp of gelatine - one sachet
4 tbsp [60 ml] of water 
4 fl oz of liquid glucose
1 tbsp of glycerine

soak the gelatine in water until the granules swell and then dissolve the gelatin either in a water-bath or in a microwave oven

mix the glucose and glycerine into the gelatine liquid and then pour this liquid into the icing sugar and knead it into a paste

wrap the fondant icing paste with cling film and allow it to rest until required
